Olivier Dubreuil discovered and developed his passion for cuisine and the flavors of his culture during his childhood while spending time with grandmother in the preparation of family meals.

He solidified his culinary education in Arcachon, a seaside town near Bordeaux, France and graduated with honors in 1985. He went on to train with noted French chefs, passing each season in a different region of Europe, experiencing a variety of cooking techniques and flavor combinations. His enthusiasm for the culinary development of Las Vegas and his willingness to build on his experience and knowledge has now led Olivier to The Venetian Resort and Casino, thus beginning the next chapter in his career. He is thrilled to be part of the team developing the Venetian during its new phase of growth and looks forward to the exciting culinary journey that lies ahead.
